Sunday is quite possibly my favorite day of the week. I love spending lazy Sunday mornings with my husband and son, making a big breakfast and usually watching HGTV and finding big ideas for our house. This weekend I tried this recipe for breakfast enchiladas that I found on Pinterest, along with Ina Garten’s peach bellinis. On the enchiladas, I made a couple of changes, basically to add a little more kick: 1. I used Guy Fieri’s Tequila Lime Chicken Sausage instead of ham and 2. I added Chipotle Tabasco to the eggs. My husband also makes the most delish homemade salsa from a recipe his mom gave us. Even though it is just Monday, I already can’t wait till next Sunday with my boys!
