For this week’s Wellness Wednesday, I’m excited to share a recipe that I put together when we were meal prepping a few weeks ago.
At the event I hosted with The Barre Code and Neiman Marcus back in September, one of the brunch bites that the NM chef created was an energy bite. It was absolutely delicious and I chatted with him a bit about what was in it. He didn’t give me the exact recipe but after combing Pinterest for a bit and taking a few things from a few recipes, plus the chef’s tips, I put this recipe together for a healthy snack. It’s one that you can easily modify to make with things that you like. For example, I like the dried blueberries but you could also use cranberries or skip them altogether if you’d rather. I used milk chocolate chips because that’s what I had, but I think they’d also be great with dark chocolate.
I like these because they’re a little bit of sweet (which helps my sugar cravings!) but does contain ingredients that make it healthier than a cookie and just one does the trick for me.
Here’s the recipe I used to create these Chocolate Blueberry Energy Bites:
- 1 cup old fashioned oats (I toasted mine in the oven at 350 degrees for 10 minutes, stirring half way through)
- 1/2 cup flaxseed meal (ground flaxseeds)
- 2 scoops of Vital Proteins Vanilla Coconut Collagen Whey
- 1/2 cup dried blueberries
- 1/2 cup chocolate chips
- 1/4 cup honey
- 1/2 cup peanut butter
Combine oats, flaxseed meal and collagen whey in food processor and pulse until ground and combined well. Add blueberries and chocolate chips, combining until everything is combined and there are not large pieces of anything.
Add honey and peanut butter to food processor and pulse until everything is combined and a ball of “dough” forms.
Scoop with a cookie scoop and roll into even balls. Place in a parchment lined baking dish and put in refrigerator for 20 minutes.
Store in the refrigerator and enjoy at room temperature.
