Tex Mex Night


One thing we miss most about Texas is easy (and frequent) access to Tex Mex food. When we moved north, we decided that we needed to become experts at making it ourselves. Over our 4th of July vacation we kicked things off at the lake with a Tex Mex night, complete with fajitas, spanish rice, ranch style beans, Clint’s homemade salsa and guac, margaritas courtesy of my brother-in-law and tres leches cake and cowboy cookies for dessert.

What We Made:
As you can tell from the last post I did like this, I love recipes from The Homesick Texan. We’ve liked everything we’ve made from her cookbooks and website, so whenever we need a Tex Mex fix, I always look there for inspiration. It was a group effort putting together dinner on the day of because we were traveling that day, as well. I think it could be totally doable on your own with some advance planning and prepping.
The Tabletop:
We had a few things, like these Sur La Table serving dishes (and racks), but to make things even more fun, my mom made a little run to Pier 1 Imports and stocked up on some festive tabletop items. These margarita glasses, dip bowls and table runner were all new additions and the sunflowers were another pop of brightness for our sunny evening dinner. I loved the set up and can’t wait to do a little Tex Mex brunch at our house and set up in a similar way.
