On the Menu: Caprese

 
 
 
 

Along with avocados, one of my current favorite foods is just about anything caprese. It’s bright and pretty on a plate, and is such a versatile and easy combination. You can start with something as simple as a light salad with fresh tomatoes, mozzarella and basil. I drizzle mine with a little olive oil, red pepper flakes, black pepper and sometimes a touch of balsamic vinegar. I also make an Italian turkey burger (which is adding minced garlic, paprika, salt and pepper to ground turkey) and use tomato, mozzarella and basil as toppings. Or instead, I’ll chop up and throw those toppings in with some pasta and grilled chicken for a quick and easy dinner – Jackson even likes that one!

With the Farmers Markets around here open now, I’ll be looking for fresh basil and tomatoes, including some heirloom tomatoes too, to experiment with some new recipes like these:
