Easy BBQ Chicken Pizza

In our attempt to make quick, easy, healthy (sort of) dinners, the latest weekly tradition at our house is pizza night. To keep things healthier, we try to come up with combinations where we can add veggies and minimize the cheese. This week’s pizza was BBQ chicken, made up and cooked by my husband (photographed by me), who really is a great cook.

Ingredients:

  • Prepared pizza crust (we use Boboli thin crust)
  • BBQ Sauce (our favorite is Rudy’s)
  • 1 whole boneless, skinless chicken breast, dice
  • 1/4 red onion, sliced thinly
  • 2 plum tomatoes, diced
  • 1/2 ball fresh mozzerella cheese
  • Chopped cilantro, for garnish

Directions:

  • Heat the oven according to package directions of crust
  • Brown the chicken in a pan on the stove, adding a couple of tablespoons of BBQ sauce for the last minute or two
  • Spread a light coating of BBQ sauce on the crust
  • Cover crust with chicken, followed by tomatoes, onions and mozzerella
  • Cook according to crust package directions (ours was 8-10 minutes and we typically cook 10 minutes)
  • After taking out of the oven, sprinkle on cilantro and serve
